Every business that has re-opened has had their own pivots & adaptations and challenges to overcome.
Instead of long lines inside; put in a window for take-out & turn the parking lot into outdoor seating & you are good to go.

My boost for today is for #Taco Trio in the Knightville neighborhood in South Portland.
I was there the other day with a friend from out of town, who had lived in Mexico for years. He was pleasantly surprised at how authentic the food was.
They've got everything from barbacoa to vegan & vegetarian options.

No need to wait for Taco Tuesday when you could be living Sopes Saturday.

Check out their horchata, traditional Mexican desserts, agua fresca and they've jarred their margaritas.
